Corn and Zucchini Salad with Feta
serves 4
Ingredients
- 2 ears corn kernels
- 1 lb zucchini, thin slice lengthwise on a mandolin
- 2 T basil, coarse chop
- 2 T C parsley, coarse chop
- 2 T fresh mint, coarse chop
- 2 T olive oil
- 2 T white wine vinegar
- 1/2 t red pepper flakes
- 4 oz feta cheese, crumbled
Instructions
- Whisk together the olive oil and vinegar, mix in the pepper flakes, then season to taste.
- Toss the corn, zucchini, basil, mint, and parsley in the dressing.
- Plate, garnish with the feta cheese, and serve chilled.
